I tried grilling pizza last week and will post about that shortly! Here is our menu for this week:
Monday: Gillespie Enchiladas with Spanish Rice
Tuesday: Bowling and Pizza with some friends
Wednesday: Parmesan Chicken Tenders with Frys
Thursday: Steak kabobs with White Rice
Friday: 4th of July-Sniders Garlic Burgers, Pasta Salad, Easy Dip, Watermelon, Homemade Ice Cream and Fireworks!

Weekly Menu Idea
So I had an idea. I often make a menu, write my shopping list, buy the groceries and then somehow don't make whats on the menu and end up wasting some food or freezing it. So I had the idea to post my menu on the blog and then at the end of the week talk about what I made, what worked, what didn't, what we liked and what we disliked. We will see how this works.
This week I decided to cook on the grill as much as possible because our temps are reaching the upper 90s, it's friggin hot and I would rather not heat up my entire house while I'm trying to cool it down.
Monday: BBQ Chicken and pasta salad
Tuesday: Burgers on the grill and Corn
Wednesday: Chili's Southwestern Egg Rolls (I'm making them from a copycat recipe, not ordering them from the restaurant)
Thursday: Pizza on the grill (first attempt with making dough from scratch, first attempt with yeast and first attempt at grilling pizza dough)
Friday: Goodwood Restaurant for Steak (request from the hubby)

Diabetic Phyllo Fruit Cups
I bought a package of Phyllo dough and let it unthaw. I took 1 sheet of the dough and sprayed it with cooking spray and sprinkled it with cinnamon and Splenda. I put 1 more sheet over it and sprayed it again. I took 1 more sheet, sprayed it and sprinkled more Splenda and cinnamon on it. I cut the sheets into 6 squares and the carefully placed them into muffin cups. I repeated this process until I had 12 cups made.
Our wonderful dinner of pot roast needed to settle before dessert, so while we opened gifts I cut up strawberries and placed them in a bowl with raspberries and sprinkled a little Splenda over them and put them in the fridge to get juicy.
After gifts and watching some golf we were ready for dessert. I filled the cups up with Fat Free Sugar Free Ice Cream (tastes exactly the same as regular ice cream, I was worried) and scooped the fruit on top.
These were so easy to make and so good! My mom said that Phyllo cups tasted like churros.
This was the first time I used Phyllo dough and it was a little difficult to work with, it ripped really easily, but I'm excited to use it again.

Easy Dip

I was looking for a dip recipe one day and couldn't really find one that I loved, so I made this one up and it is requested all of the time.
2 cups ranch (which is 1 bottle)
1 cup sour cream
1/2 cup parmesan cheese
14 cup chopped green onion
1 package of Kraft real bacon pieces (or you can cook your own bacon)
1 small can of chopped olives
Pepper to taste
Serve with crakers and vegetables.

My brother-in-law turned 30 last week! My sister threw a giant party for him and of course we had to make a cake. She wanted to make him some type of Army looking cake because he is in the National Guard. I googled and brainstormed and we put together a tank cake. We started by making a 9X13 cake and cake in a bread loaf pan. When they cooled we frosted them and put them together. We frosted them with white frosting and then used frosting spray from Michael's to spray the tank green. Then we used Oreo cookies as the tires and a Hershey bar to look like tread. We crushed up Oreo for dirt and used chocolate rocks in the dirt. She did the writing and included his units number on it. The cake was a hit and everyone loved it! Here is a tip though, you need to open a window or door when you use the spray. It made her kitchen smell like a salon. And don't taste the frosting while it is wet from the spray, it tastes like chemicals.

Slacker
I mentioned a while back that I haD some decorating that I was doing. I am still working on my projects, but they are not done yet. I am making some wall art to go above my bed and was going to order some fabric, but decided not to get fabric from the place so I am still looking for the perfect fabric. I am also working on some art to go on my giant red wall in my family room, but my husband and I can't agree on what to put there. And I still need to get a shelf to go in my bathroom, but I might repaint it first. So I am still working on my projects and will post when they are prefect and complete!
