I really hate posting recipes without pictures, but I've been meaning to post this recipe for a year! I love this recipe because it's so easy, the presentation is lovely and the taste is amazing! It's really quick to throw together and makes the perfect Sunday night dinner!
1/2 Rotisserie Chicken (skinned and cut into bite sized pieces)
1 package pie crust (a top and a bottom)
1 package of frozen mixed vegetables
1/3 cup butter
1/3 cup flour
Salt and Pepper to taste
1 3/4 cup chicken broth
2/3 cup milk
1 egg, beaten
Preheat oven to 425 degrees. Put the bottom pie crust in your pie pan. Prick the pie crust with a fork a couple of times. Melt the butter. Then add the flour and stir to combine. Cook for 1 minute. Add salt and pepper to taste, the chicken broth and the milk. Bring to a boil and cook for 1 minute. You want the sauce to have just a little bit of thickness to it. Remove from the heat. Add the chicken and the frozen vegetables and stir. Pour into the pie crust. Put your top pie crust on and cut and X on the top to allow steam to vent out. Brush your crust with the egg. Bake for 25 minutes.

I have a pretty easy chicken pot pie recipe but this one sounds so much better! I love chicken pot pie but Israel isn't a fan. Oh well.. I think I'll still be making this and savor it myself! (Good thing I like to take leftovers for lunch at work right!?)

Mallory, it freezes really well. Okay, well I guess I can't accurately make that statement, because I've only eaten it after it's been frozen.
However, I can't imagine it being any better fresh. It really is delicious.
I'm trying to figure out why I froze that for you Melanie and why I didn't just put it in your fridge. Oh well!
